im going to be welding the dana 60 rearend on the truck. its for hauling wood and offroading not a dd. i will drive it to the trail- most are within an hour. if i lincoln lock the rear can i just take out a shaft and leave the other one in to drive- im thinkin this will make it scrub less. its a full floater axle so it seems like the 80/90 lubes the bearings so i would need a cover for where i take off the axleshaft?

I'm sure you can do it but for the limited time you list I doubt it's worth the hassle.
I have been running a welded 14-bolt since 2006, I sometimes do 1,200 -1,300 mile highway trips and do not worry about it.
I do get more wear on the rear tires but if i'm planning a trip I just run a higher pressure than normal in the rear, around town and short trips I don't bother with it.

Driving with only 1 shaft is not going to be fun. First it will pull to one side on the street, typically to the opposite side that the shaft is on. You also may be surprised how easy it is to spin the tire when you don't want too as the power will no longer be divided between two tires.
I drove my Toyota Lincoln locked in the rear all the time in town, just add more air and the tires scrub less. My wife even drove It that way quite a bit.
the ONLY reason i want to weld it as opposed a locker is $$$$. the to do list keeps growing with each wheeling trip and most build on each other- ie spring over front needs new steering. i figure if i break a shaft or grenade the diff ill HAVE to get a real locker and chromoly shafts

If you are doing it because your broke.... don't It will wind up costing you more in the long run. Weld it and run it. I have ran welded rears on the street for years, never once had a problem, there is defiantly a differant driving style, but it is not bad.
