Offset is not typically used for truck wheels. Backspacing is the preferred measuring method, as it does not change based on wheel width.
You typically want 3.5-3.75" BS on either a 15x8 or 15x10 wheel. The 15x10 will give you a wider footprint, but can also result in losing a bead easier offroad.
Where did you find 33x12.50R16 tires? I run 16" wheels on my JK and have never seen that size before. Have always had to run 285/75R16's (Which is 33x11.25). The downside to running a 16" wheel is most of the 16" tires are D or E rated, so you get a rougher ride. But the tires are tougher.
If I was going to switch wheel size on my J10, I would go up to 17's and skip 16 entirely. Way better tire selection.
