My first "harvest" ever. Just took the hunter safety course last summer. Smallish buck Antelope. About 34lbs of meat.

Everything but the tenderloins is sausage, now. Haven't had any of the breakfast sausage yet but the summer sausage is awesome; no "sagebrush" taste, at all. I had it professionally processed, and in my experience, Antelope tastes a lot better if it doesn't get a chance to run and get heated up. I hit the spine, clean through the neck so he didn't move. He was hanging in a cooler, at the processor, less than two hours later.

You're right, I have found this to be true of deer too. My kids and I used to go Antelope hunting a lot but I haven't since we left Wyoming over 20 years ago but next year I'm going to try to go and take the grand kids.

I was always more fond of seafood personally. Wild hoofed animals are OK, but I like shark fillets better. This is my sister and I 40 years ago on a family shark hunt. Sharks this size (11 + feet) can produce 125# fillet from each side.

Those two white square panels look like radio links for network connectivity. Probably for the camera(s).
