I've tried numerous times. I worked in a boat yard where we had a guy that was pretty good at, but I've never been able to color match. It always ends up looking like an off-color smear of gooey snot.

Its black so its easy, but im mostly concerned with the grain
You'd be amazed at how many shades of black there are, haha! The guy that was good at it had a CD case full of grain stamps and an attachment that hooked to the end of a heat gun he used to stamp the patch. I still say give it a try, just don't expect perfection in your first go. Who knows, you might be a savant.

Another option that will cost less is having your existing dash 'wrapped'.
The upholsterer repairs cracks and damage then lays a new layer of vinyl over everything.
While this is a late model dash being wrapped, you can get an idea of the process.
This guy is one of the best upholsterers I've ever seen!
a bit late, I had good success with the black on the the vinyl door panel, from the kit at your auto store, it was pretty good.
On the other hand the burgundy that I created on the door panel and the armrest exposed to the sun are separating after 6 months.
