My plan is the pork tenderloin sandwhiches.
I take a port tenderloin, cut it into 1" squares and then pound those flat with a tenderisor.
Fry some onions in butter.
Take the flattened pork tenderloin and bread it with some flour and pepper.
Cook the pork tenderloin in the pan next to the onions.
Place the pork and onions on a small slider like bun, add some mayo. It's very yummy.

The great part is they make a nice snack/appetizer so there will be plenty of room for the other food!

Shimniok looks like he's going to drop out. We borrowed my parents EZ up so we can cover the canopy he's signed up for!

If my schedule holds, I'll be rolling into Ouray around 6:00.

I work right near Shimniok so I could pick up the burgers.
