Will a Dana 60 steering knuckle interchange with dana 44 knuckle,?

Nope D60's use king pins and D44's use ball joints. Unless its a newer balljoint D60 but I still think not.

No D60 uses a D44 sized knuckle, be it kingpin or ball joint.
1981 J10 AMC 258 with HEI and Weber 32/36 DGEV Carb, T176, NP208, D44/M23 with 4.56 gears and Detroit Locker, 6" lift, 33x12.50 Cooper STT's, BJ's Offroad Rear Dozer Bumper.

Some of these kits, have one knuckle other have two. Any good reasons to use one?

Those are D44 flat top knuckles for use with high steer or crossover steering. They require an open knuckle D44 axle though. If yours is stock, its closed knuckle and they won't work.

My 1988 jeep has open knuckles.

Ahh ok. For some reason I thought yours was a 60’s. Helps to put vehicle details into your signature :)

I bought a salvage yard axle, if I can rework it into something I can swap in, on the same day of removing the current axle.
Welding on perches, add a locker., and pivot pinon angle for optional driveshaft line up.
