I am stuck on wheel width. There are as many opinions as there are stars in the sky. What I really need is some evidence either way. My tire size will be 33. I am thinking 12.50 wide. My current stock wheels are 15x8 if I measured right. Do I get 15x10 wheels? Stay with 15x8 and go 10" wide? I have searched endlessly about this on this site and others. If you have experience please help me out.

I would go with the minimum width they recommend for the tire size you want. I know you don't plan on wheel'n your rig hard but the less metal sticking out the better. It also makes the tire a bit taller. That's my 2 cents.
No, you find a shop that isn't too full of themselves to take your money. They might not sell you the scam warranty, but if you're buying 33s, they're not going to honor that thing anyways.

This is a photo of 15x8 Cheapy Summit wheels and 33x12.50s. Just the right amount of sidewall to protect the wheel but not being all wiggly due to sidewall flex. 15x10s would make the tire a bit taller with a bit less sidewall 'pooch'.
You can see where a weekend of mud puddles and rock crawling left marks no farther than the sidewall at it's widest
